Cooking healthy and delicious food is not always easy. Some recipes call for ingredients that you may not have in stock or are difficult to find in a regular grocery store. While other healthy recipes can be time consuming and complicated to prepare. I wanted to have eggplant parmesan the other day and knew that if I made it my normal way, the calories would be more than I should have for my dinner meal and the time that it would take to prepare would be more than I wanted to spend at the end of a long day. I came up with a delicious and quick alternative that really had a lot of flavor and a lot less calories.
time-consuming eggplant Parmesan
set oven to broil
1 eggplant sliced with skin on
1 jar of spaghetti sauce, warm the sauce
1 container of grated pecorino romano cheese
Line a baking sheet with non-stick foil. Place the slices of eggplant on the foil. Place the baking sheet in oven and broil till a bit brown. Turn slices over and brown other side. Keep close watch as the slices will brown quickly. Remove pan from broiler and using a teaspoon, spread a small amount of the warm spaghetti sauce on top of the slices, then top with a small sprinkling of the grated cheese. you can eat them just like this or pop the pan back into the boiler for a minute or two to melt the cheese. Serve with a tossed salad and you have a quick delicious meal.
