Sausage, Peppers and Onions
One of my favorite summertime foods are the sausage and pepper sandwiches that you get at the Jersey Shore. To me this is the thing to eat when you are strolling the boardwalk at night after a hard day at the beach. Unfortunately, this sandwich is loaded with calories. So, I thought why not substitute spicy turkey sausage for the pork sausage and drop the bun and see if the taste will be as enjoyable. This recipe proves that it is and now I am able to enjoy my favorite summer treat year round.
Turkey Sausage, Peppers and Onions (serves 2)
4 spicy turkey sausage links
1 sweet onion sliced
1 red pepper sliced in strips
1 green pepper sliced in strips
1 tablespoon of olive oil
1 jar of spaghetti sauce
To prepare the turkey sausage you can either cook them on the grill or grill them in a cast iron skillet. Turn them as they brown so that all sides are cooked and nicely browned.
While the sausages are cooking, saute the onions and peppers in a cast iron skillet with a tablespoon of olive oil until they soften and are lightly browned. Do not allow the peppers to become mushy.
In another pot, heat up the spaghetti sauce.
Once the sausages are done, place each serving on a plate, top them with the onions and peppers and then spoon some of the sauce on top. Serve with a salad or other grilled vegetables and you have a wonderful meal. Just like summertime at the beach!
